Maple sugar is maple sugar!
While you sometimes see 楓糖 on packaging for maple sugar or products made with it, in everyday life it's more common to just say メープルシュガー.
楓 uses the kun'yomi and 糖 uses the on'yomi. You already learned both of these, so you should have no problem with this word's reading: かえでとう. You might see some stores use this instead of メープルシュガー to keep things short and… maple-sweet.
楓糖 can also be read as ふうとう, using the on'yomi for both kanji. Since 楓 contains the 風 component, it makes sense that its on'yomi is ふう, right? Just know that ふうとう sounds a bit more technical or formal than something you'd sprinkle in your morning oatmeal.
料理には砂糖の代わりに楓糖を使うことが多いです。
